The smoke created from the aromatic shavings of oak wood give the aroma of pepper and caramel. It is used in coal, gas, but also in ovens. Use: Wet the shavings 20 minutes before use, and then place them directly in the embers so that the smoke passes into the food. Preferably used in fish, red meat, dairy products.
